Caramel Apple Pie: A Sweet Slice of Fall-image

Nothing says fall quite like the warm aroma of apples and caramel baking in the oven. Our Caramel Apple Pie is the perfect treat to cozy up with on crisp autumn evenings. With a buttery, flaky crust, tender cinnamon-spiced apples, and a drizzle of rich caramel, it is comfort food at its finest. Whether you are enjoying a slice with a scoop of vanilla ice cream or sharing it with friends and neighbors, this pie is a celebration of everything we love about the season. The sweetness of caramel balances perfectly with the slight tartness of fresh apples, creating a flavor combination that is classic but never boring. For an extra touch of indulgence, top it with a sprinkle of sea salt or a handful of toasted pecans. It is simple, seasonal, and irresistibly delicious.   Caramel Apple Pie Recipe Ingredients: For the crust: 2 1/2 cups all-purpose flour 1 tsp salt 1 tsp sugar 1 cup (2 sticks) cold unsalted butter, cubed 6-8 tbsp ice water For the filling: 6-7 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced 1/2 cup granulated sugar 1/4 cup brown sugar 1 1/2 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp salt 2 tbsp all-purpose flour 2 tbsp unsalted butter, cut into small pieces For the caramel drizzle: 1/2 cup caramel sauce (store-bought or homemade) Optional: pinch of sea salt Instructions: 1. Make the crust: In a large bowl, mix the flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough just comes together. Divide into two disks, wrap in plastic, and chill for at least 1 hour. 2. Prepare the filling: In a large bowl, toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, salt, and flour. Set aside. 3. Assemble the pie: Preheat oven to 425°F (220°C). Roll out one disk of dough on a floured surface to fit a 9-inch pie pan. Place the crust in the pan and trim excess edges. Fill with the apple mixture, dot with butter, then drizzle a little caramel over the top. Roll out the second disk of dough for the top crust and place it over the apples. Trim and crimp the edges, and cut a few slits in the top to allow steam to escape. 4. Bake the pie: Bake for 20 minutes at 425°F, then reduce the oven to 350°F (175°C) and bake for an additional 35-40 minutes, until the crust is golden and the filling is bubbling. 5. Finish with caramel: Let the pie cool for at least 30 minutes. Drizzle with additional caramel sauce and a pinch of sea salt if desired. Slice, serve, and enjoy with vanilla ice cream or whipped cream. Tips for the Perfect Pie: Mix different apple varieties for a balanced sweet and tart flavor. Make sure the butter for the crust is very cold—it helps create a flaky, tender crust. Don’t skip the cooling time; it helps the filling set for cleaner slices. ✨ Pro Tip: Serve warm with a scoop of vanilla ice cream for the ultimate fall dessert!

Eden’s Waitlist-image

At Eden Apartments, we are a community housing community, which means people are moving in and out all the time. Many of our future residents like to plan ahead, and our waitlist makes it easy to do just that. For example, let’s say you are hoping to move in April 2026. The first step is to explore your favorite floorplans on our website. On the photos and tour tab, you can even take a 3D tour of the apartment to get a real feel for the space. When you are ready, come visit us in person! We would love to show you the ins and outs of your future home. Eden’s waitlist works a little differently than other apartments in Rexburg. Instead of everyone waiting for one specific apartment to open up, we have several apartments become available each month. Our leases are flexible, and residents provide us with their 60-day notice when they are ready to move out. That is when we know exactly which apartments will be available. To join the waitlist, simply submit your application, pay the security deposit of $250, and the application fee of $40 per applicant over the age of 18. We will then add you to the waitlist for your preferred floorplan. As soon as a unit matching your preference becomes available, we will give you a call. You are also welcome to check in with us occasionally, but please keep in mind that we cannot guarantee availability, and typically we know about which apartments will open up about 60 days before your approximate move-in date. If you have any questions or want help getting on the waitlist, please call our leasing office. We are happy to walk you through the process and help you plan your move to Eden Apartments.

Time to Dream Bigger for Next Year’s Bucket List-image

The days are getting darker and the evenings seem to arrive a little sooner. As the season slows down, it is a perfect time to pause, reflect, and think about what is next. The shorter days are an invitation to plan, dream, and start mapping out your bucket list for the year ahead. This is a great moment to look back on the past year. What brought you joy? What adventures did you experience? What opportunities might you have missed? Maybe you found a favorite trail to hike, tried a new hobby, or discovered small routines that brought comfort and happiness. Whatever it was or was not, now is the time to turn those thoughts into intentions for the next year. Your bucket list does not have to be full of extravagant trips or sky high goals. It can be simple, meaningful, and personal. Maybe it is exploring more of Idaho’s hidden gems, trying new recipes, learning something new, or spending more time on hobbies you have been putting off. Maybe it is discovering new coffee shops, taking a weekend road trip, or enjoying more mornings watching the sunrise. These small moments add up to a year full of experiences worth remembering. Writing down your plans and goals gives them weight and clarity. The quieter months of the year give space to dream and think about what truly matters to you. Even as the days are shorter, there is plenty of light to look forward to in the months ahead. Take this time to reflect, plan, and imagine the adventures you want to have next year. ✨ Your next adventure starts with a little reflection and a lot of imagination. Start dreaming now and let the year ahead be full of possibilities.

Preparing Your Apartment for Cold Weather in Rexburg-image

Use draft stoppers or rolled-up towels along doors and windows to keep cold air out and warm air in. Add Warm Layers Swap light curtains for thicker ones and put down rugs if you have tile or hardwood floors. This not only keeps things warmer but makes your space cozier. Replace Air Filters A clean filter helps your heater run efficiently and improves your indoor air quality. Rotate Seasonal Wardrobe Pack away summer clothes and move coats, boots, and gloves to the front. You’ll thank yourself on that first frosty morning. Communicate with Maintenance If your heater isn’t working properly, let management know early—before the first big snow hits. At Eden Apartments, we want you to stay warm and comfortable. A little preparation in October will help you enjoy a worry-free winter.
